Sometimes We All Need a Little Chicken Soup for the Soul

It’s Monday . . . Again. For many, you have today off for Veteran’s Day. I admit I am really missing the paid holidays I had at my old job. The benefits are what I miss, the people who are there now . . . well, I can’t ever see myself missing a pit of vipers . . . I’ll deal with work on various holidays as long as I am not going home hating such a big part of my life. For those of you off work today, don’t forget WHY you are off work, OK? Our veterans deserve to be appreciated and recognized.

Yesterday I made a chocolate zucchini cake. I love it. Hubby, not so much. He isn’t a big fan of veges in desserts, except for pumpkin pie, since without the pumpkin you don’t really have much more than a crust and come goopy eggs in evaporated milk. Yum! (HAHAHA) I also made a double batch of cookies, that did NOT turn out. It’s been awhile since I made cookies with sugar, grabbed a natural alternative sugar instead, and they came out with a weird texture. I can’t send these to anyone, but I’m thinking if I grind them up, maybe they will make a good crust for a cheesecake! Silver lining, right?

Happy 5th Anniversary to my handsome son and beautiful daughter-in-law! I love you both so much! Have a wonderful day today!

Thoughts on the Verse of the Day

In a world where we can feel so isolated and alone at times, it is so important for us to know that someone is praying for us and for our spiritual needs. As I think of the thousands who are a part of the Today’s Verse ministry, I cannot help but pray that each of them, that you, are blessed by knowing that you share a spiritual journey with people all over the world, and that today, we will praying for each other. And of course,  there can be no better prayer than the one that Paul prayed for the Colossian friends he had never met — “I ask God to fill you with the knowledge of his will through all spiritual wisdom and understanding.” Let’s pray that for each other today.

I Am Thankful For . . .

The men and women of our military are the reason we are a free nation. Without them, we would be overrun, more than we are already, by invaders who intend us harm.  They sacrifice their time, their health, and sometimes their very lives, leaving their loved ones at home, to go where our President and those he appoints tell them to go. They breathe every breath in honor and love for our country. I am so thankful for them and the sacrifices they make, each and every day.

 

 

Chicken Soup for the Soul Day – is a celebration about you, and me . . . about all of us.  According to the people who created the book series by this name, this celebration was created to celebrate who you are, where you’ve been, where you’re going, and who you will be thankful to when you get there.   This is a day of the value and healing powers of chicken soup – be it for the body, or for the soul.  This is healing that is homemade and comes from the heart.

1981 – The space shuttle Columbia was launched for the 2nd time. This was the first time a space vehicle was used more than once.

 

Food Celebration of the Day –

 

National Pizza with Everything Day (Except Anchovies) – No offense to cheese pizza, but it’s the toppings that really make the pie. In this case, go sweet, salty or with a combination of both. Just hold the fish! For me the perfect Pizza With Everything would be – cheese, pepperoni, salami, olives, pineapple, green peppers, tomato slices and bacon!  It HAS to have bacon. This sounds like the perfect dinner tonight, don’t you think?  (This picture is one I took last summer of pizzas I did on the grill – the two on the right had all of the above listed ingredients for hubby, and mine had all sorts of interesting things – chicken, goat cheese, figs – it was delicious!)

 

 

Well, now that I need to stop at the store for pizza ingredients, I better make my list, then get out the door to go to work! No matter how you spend your day, at work or home from work, find something to celebrate and thank any Veteran you see today. God bless you and I’ll see you tomorrow.
